MIAMI (CBSMiami) – At Proof Pizza and Pasta in Wynwood the “proof” is in the pasta and pizza!

“So the proof is the way we ferment the pizza dough. It rises overnight. We proof it overnight so it gets a lot of flavor. It’s a fine type of flour for a Neapolitan pizza which is what we do,” said Justin Flit, head Chef and owner of Proof Pizza and Pasta.

After working in top notch kitchens in both New York and Florida, Justin had a dream to chart his own course and has done that now for more than a year at this hidden gem that’s fast become a local favorite.

“We wanted to have a low price point but we make everything in house so all the pizza dough and pasta dough is made by hand everyday. It’s labor intensive but we just wanted a great neighborhood spot,” Flit said.

Dining is both inside and out – beers on tap and mostly Italian wines served. Proof also celebrates the artsy side of Wynwood.

“We wanted it to fit in the neighborhood. We have works by local artist Enrique Machado. He does all the pieces. It’s called silicon art,” Justin explained.

On to the food!

Justin’s cuisine gets such rave reviews, Proof was chosen to participate in Thursday night’s Italian night at the South Beach Wine and Food Festival.

Justin will be preparing a dish like this. His homemade Cavatelli pasta with San Marzano tomatoes and fresh parmesan.

“There’s a true difference when the pasta is homemade and not out of a box. There is a special consistency and the homemade marinara sauce is delicious,” said CBS4’s Lisa Petrillo after tasting the pasta.

Next on the menu, brussel sprouts salad made with candied pecans,dried cranberry and apple cider vinaigrette. It’s a fan favorite.

“So much crunch. So much flavor. The sprouts have a light texture to them and then bring in cranberries and it’s divine as a side or a meal,” Petrillo said.

Finally, Justin’s signature Oxtail Pizza made with black garlic puree, caramelized onions and braised oxtails.

“I had no idea what to expect when you put oxtail on a pizza with mozzarella. It’s sensational! The oxtail almost has a barbecue flavor to the meat that is super tender, and then the caramelized onions and the cheese! Add the thin homemade pizza dough and it’s a delicacy,” Petrillo gushed.

Proof Pizza and Pasta- where the proof is most definitely on the plate.

The restaurant is open 7 days a week for lunch and dinner or enjoy it if you’re going to the South Beach Wine and Food Festival Thursday night.
