Taste Of The Town: Bacon Wrapped Dates With Stuffed Goat Cheese

MIAMI (CBSMiami) –South Florida is known for fun, sun and sandy beaches but it's also all about the food.

One of the reasons Miami has become a worldwide culinary destination is because of Executive Chef David Hackett from the Biltmore Hotel and Biltmore Culinary Academy.

Chef Hackett started cooking when he was just 12-years-old and has now been in the hospitality industry for over 35 years. Hackett's experience as Executive Chef includes many prestigious properties and resorts but now his talents reside in the Biltmore kitchen.

That's where CBS4's Lisa Petrillo met up with Chef Hackett who shared his amazing recipe for Bacon Wrapped Dates with Stuffed Goat Cheese.

Here's the recipe:

BACON WRAPPED DATES WITH STUFFED GOAT CHEESE

Makes 2 dozen

  • 24 dates
  • 24 slices bacon
  • 8 ounces goat cheese
  1. Preheat the oven to 375 degrees F.
  2. Make an incision on a date and take out the pit. Pinch off a piece of goat cheese ( or blue cheese) and place it in the inside of the date.  Close the date and wrap it a third-slice of bacon around the date.
  3. Line a baking sheet with parchment paper and a cooling rack on top. Arrange the dates on the cooling rack, make sure that the bacon is tightly wrapped around the date and that the end of the bacon strip is facing down.
  4. Bake for 30 minutes, until the bacon is crisp.
  5. Dig in and enjoy!
