SoBe Food Fest Creator Cooks Up "America's Best Breakfasts"

MIAMI (CBSMiami) - As founder of The Food Network's South Beach Wine and Food Festival, and author of now three cookbooks, Lee Schrager knows a lot about good food.

CBS4's Lisa Petrillo met up with him recently at his Coral Gables home to cook a recipe from his newest book, which is out in stores this week, titled "America's Best Breakfasts."

"I think that breakfast is best meal of the day. Why? Because it's the only meal of the day where you can wear your bathrobe and not feel guilty. Plus, you can have breakfast for breakfast, lunch or dinner," said Schrager.

Schrager went on a road trip across the U.S. to find the best breakfasts for his book. He narrowed it down to 75 easy to make recipes.

"We traveled from the southeast to the southwest, to the northeast to the middle of the country. Every one of these recipes is geared for the home cook," he said.

For example, there's a South Florida favorite - a recipe from Buena Vista Deli located in Miami's Design District.

"Buena Vista Deli's Quiche Lorraine is not only one of great quiches of all time, it's also one of simplest recipes in "America's Best Breakfasts," said Schrager.

He said it all starts with a home made whole-wheat pie crust or you can opt to buy one.

As for the the filling:

4 cut up pieces of prosciutto
2 cups finely diced thick ham
4 eggs
2 cups heavy cream
1/2 cup whole milk
1 cup Gruyere cheese
3/4 cup shredded mozzarella cheese
1/4 teaspoon nutmeg.

After whisking together the milk, eggs and cream, Schrager puts the meats and Gruyere on top of pie crust. Then it's time for the pour.

Just pour the eggs, milk and cream over the entire thing. It's finished with 1/2 cup of grated mozzarella on top give it that nice brown bubbly look.

There you have Buena Vista's Quiche Lorraine, the greatest Quiche Lorraine ever," he said.

The quiche is cooked at 325 degrees for 80-90 minutes.

Petrillo described it as a bit of "French heaven made right in your kitchen."
