Klima Restaurant & Bar Offers More Than Miami Spice

MIAMI BEACH (CBSMiami) - Chef Rusti of the new Klima Restuarant and Bar on 23rd and Collins Ave. on Miami Beach is busy preparing his Fennel Carpaccio appetizer, one of the many delicacies on the menu this month & next for Miami Spice.
Miami Spice, now in its 14th year, is when some of the finest restaurants offer three-course meals for less. Bill Talbert of the Greater Miami Convention and Visitors Bureau explains.
"For lunch it's 23 dollars for dinner it's $39. You get an appetizer, entree and dessert all included," Bill Talbert of the Greater Miami Convention and Visitors Bureau said.
Klima is one of 194 restaurants participating in this year's Miami Spice. The restaurant is a Barcelona-inspired eatery specializing in western Mediterranean cuisine. Pablo Fernandez-Valdes and his business partner fell in love with Miami while visiting during Art Basel. Their love for art and architecture are evident in the 5500 square-foot modern and elegant space.
"We are also very passionate about architecture and interior design. We created and developed this product ourselves," Fernandez-Valdes said. "People can come sit on the couches and at the bar in the front room and then head out to the dining room for dinner or to the back terrace to eat outside as well".
Fernandez-Valdes is excited to have Klima participate in its first Miami Spice.
"We are very excited because we are newcomers so our main goal was to send a good message to the local people that we are here," he said.
CBS4's Lisa Petrillo begins tasting with the appetizer.
"This is our Fennel Carpaccio with sundried tomatoes and burrata cheese," Fernandez-Valdes said, while presenting the elegant dish.
"It's an explosion of flavors, there's a lemon sauce on the fennel that blends and the burrata is creamy and delicious and then a sweetness with sundried tomato," said Petrillo.
Next the entrée, a Veal-Stuffed Paccheri with a porto sauce and shaved aged parmesan.
"It's like a dessert entrée. The port sauce is sweet and the veal is super tender and there is some sort of pasta or ravioli type thing on the outside that keeps it warm and moist," Petrillo said.
And finally dessert: Passion Fruit Creme with Coconut Foam and mint sherbet and topped with cinnamon crumble.
"It's completely light and fluffy and crunchy with the cinnamon and you can inhale the bowl quickly because it goes down really light," Petrillo joked.
