At the helm is world renown Chef Ralph Pagano whose as famous for his culinary creations as he is for his many TV shows.

“Well you know, name a network, I’ve been on it, right? Food Network, Travel Channel, FOX, CBS, ABC, NBC, Bravo, Lifetime,” said Pagano. “Now I’m on ‘The Tiffany Network: CBS’. Are you listening Les Moonves?”

The menu features almost all the specialties the sea has to offer.

“So Alba means sunrise in Italian right? So what goes on here is all things daytime. I sell afternoon delight,” said Pagano. “Seaside inspires my food so we have clams, mussels, shrimp, spiny lobsters, stone crabs, everything fresh, pasta, big salads, little salads, regular salads, everything that works good.”

All of the food comes with a flair from Pagano’s Italian heritage.

“You know what? Basil, garlic and olive oil certainly are resident flavors of my kitchen but we also dab in a little bit of curry, some coconut milk, some gingers and galangas. It’s food with ethnic feel,” said Pagano.

In the kitchen, Pagano the powerhouse plows through dish after dish barking orders and making magic happen. This magic is only recognized when plated and tasted, like the delicious mahi-mahi, stuffed with crabmeat and topped with hollandaise sauce.

The delicious breakfast pizza is topped with bacon, cheese and a sunny-side up egg.

The grouper Fra Diavolo has muscles, shrimp, squid and more in a savory soup-like sauce.

And Pagano’s deviled eggs have a twist–truffles!

Alba Seaside is open seven days a week for breakfast, lunch and dinner.
