Ask A South Florida Expert: Top Recipes For Super Bowl Sunday

During the Super Bowl, hosts and hostesses are often challenged with feeding groups of people on a small budget. Scoring big and bringing you some tasty dishes for your upcoming Super Bowl party, Keila E. Molina shares some quick and delicious tips.

Keila E. Molina attended the Art Institute of Fort Lauderdale, working as she studied, earning her way through college. She earned a degree in baking and pastry. She also picked up Asian cuisine under elective studies. As a pastry chef, she owns her own business. She creatively designs the most amazing desserts. Many of her designs are so beautiful, you actually regret cutting into them. As a culinary professional, however, her talents do not just rest there. For the last two years, she has been working as a sushi chef at Bokamper's in Fort Lauderdale.

Buffalo Ranch Chicken and Cheese Dip
Buffalo Ranch Chicken and Cheese Dip

Ingredients:

  • 1 (8 ounce) package cream cheese, softened
  • 2 cooked chicken breasts, shredded
  • 1/2 cup buffalo wing sauce
  • 1/4 cup ranch salad dressing
  • 1/4 cup sour cream
  • 1 1/2 cups shredded Colby-Monterey Jack cheese
  • 1 (16 ounce) package scoop-shaped tortilla chips

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix cream cheese, chicken, buffalo wing sauce, ranch dressing and sour cream together in a large bowl; transfer to a 9x13-inch baking dish. Evenly sprinkle Colby-Monterey Jack cheese over dip.
  3. Bake in the preheated oven until cheese is melted and lightly browned, 25 to 30 minutes. Serve with tortilla chips.

Seven Layer Taco Dip

Ingredients:

  • 1 (1 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 1 (8 ounce) package cream cheese, softened
  • 1 (16 ounce) container sour cream
  • 1 (16 ounce) jar salsa
  • 1 large tomato, chopped
  • 1 green bell pepper, chopped
  • 1 bunch chopped green onions
  • 1 small head iceberg lettuce, shredded
  • 1 (6 ounce) can sliced black olives, drained
  • 2 cups shredded cheddar cheese

Directions:

  1. In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  2. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
  3. Top the layers with salsa.
  4. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Salted Peanut Butter and Jelly Blondies

Ingredients:

  • ½ cup (1 stick) unsalted butter, melted, plus more for pan
  • 1¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 1½ cups light brown sugar
  • ¾ cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons strawberry jam
  • 1 tablespoon chopped honey-roasted peanuts
  • Flaky sea salt (such as Maldon)

Directions:

  1. Whisk together 1 ¼ cups all-purpose flour, 1 tsp. baking powder and 1 tsp.kosher salt.
  2. Whisk together 2 large eggs, 1 ½ cups light brown sugar, ¾ cup smooth peanut butter, ½ cup melted unsalted butter and 1 tsp. vanilla extract; fold in dry ingredients.
  3. Scrape batter into a buttered 8x8" baking pan.
  4. Dollop with 2 Tbsp. strawberry jam; top with 1 Tbsp. chopped honey-roasted peanuts.
  5. Bake at 350° until a tester comes out clean, 35-40 minutes. Sprinkle with flaky sea salt.

Brownie Footballs

Ingredients

  • 1 (20 ounce) package brownie mix (with chocolate syrup pouch)
  • 1⁄4 cup water
  • 1⁄3 cup vegetable oil
  • 3 eggs
  • 1 (12 ounce) container chocolate frosting
  • 1 cup white chocolate chips
  • 1 tablespoon milk
  • 1 tablespoon butter or 1 tablespoon margarine

Directions

  1. Heat oven to 350 degrees F.
  2. Line rectangular pan, 13x9x2 inches, with aluminum foil, letting foil hang two inches over short ends of pan.
  3. Spray foil with cooking spray.
  4. Stir brownie mix, chocolate syrup, water, oil and eggs in medium bowl until well blended.
  5. Spread in pan.
  6. Bake 28 to 30 minutes or until toothpick inserted two inches from side of pan comes out almost clean.
  7. Cool completely, about 1 hour.
  8. Remove brownies from pan, using foil to lift.
  9. Cut brownies into football shapes, using a football-shaped cookie cutter, 3 1/2 by 2 inches.
  10. Frost footballs with frosting.
  11. Place baking chips, milk and butter in small microwavable bowl.
  12. Microwave uncovered on medium-high (70 percent) one minute; stir.
  13. Microwave about 10 seconds longer or until chips are melted.
  14. Drizzle melted chips over frosting to look like football laces.
