Chef de Cuisine, Dustin Ward of BLT Prime Miami knew at a very early age he’d be a chef as he began cooking for his family at the young age of six years old. He even enrolled in his first cooking class at ten years old. Located at Trump National Doral Hotel, BLT Prime Miami not only offers some of the best food in the city, but also has beautiful panoramic views of the resort’s golf courses. While known for it’s steaks, the restaurant also offers a variety of seafood and seasonal blackboard specials.

BLT Prime Miami is debuting a special blackboard series to ring in fall this year. Starting on Thursday, October 1, the restaurant will have a special menu that they’ve even titled “Walking Through A Pumpkin Patch”, which includes everything from roasted acorn squash to guinea hen and even pumpkin cake. Ward loves fall and wanted the area to be able to have this unique menu for the season. He states, “My favorite thing about fall recipes are the spices and the rich heavy flavors that come into play during this season. Angelina Bastidas is the chef at the Spanish inspired restaurant, Piripi. Many might wonder with such a unique name what it means, and in Spain it means that sensation between reality and dreams. Bastidas loves fall and all that it means for the dishes she will be making at the restaurant. She states, “There’s something about fall that gets me going each year, especially the ingredients I can work with. Fall introduces flavors such as sunchoke, figs, parsley root, pumpkin, quail. There is so much we can create with these ingredients.”

While originally from San Francisco, Executive Chef Jason Pringle now calls South Florida home and brings his over 13 years of experience to db Bistro Moderne, which is located inside the JW Marriott Marquis Miami. A modern French-American Bistro, db Bistro Moderne provides a large variety of dishes that fit in well with it’s casual and easy-going dining experience. Don’t miss happy hour daily at their bar and lounge from 5 to 8 p.m. Pringle shares that fall is one of his absolute favorite seasons for food as, “the earthy flavors are always comforting to the soul.”
Pringle states, “One of my favorite things about pumpkin is that it is extremely versatile. It can be roasted, pickled, put into salsas, pasta or just about anything savory or sweet.” He shares his pumpkin ravioli that is perfect for making at home for the family.
