Bulla Serves Up Mediterranean Cuisine With A Spanish Flair

MIAMI (CBSMiami) - Based on the success of the original in Coral Gables, a new Bulla Gastrobar has opened in Doral .

"Bulla is a Spanish concept Mediterranean cuisine. I think the unique thing here is you get the energy when you step inside," said Executive Chef Miguel Rebolledo.

With dining both indoors and out in the a 5,500-square-foot restaurant, the modern European open space design is all about the energy and vibe.

"Bulla means noise, but noise when you're with friends and family, like a party! Bulla! You can feel the energy when you get inside," said Rebolledo

Rebolledo cooks his dishes with authentic Spanish flair using a Josper oven, only seen in a few restaurants throughout the United States. It's both an oven and grill at the same time .

"You cook the meat and fish with cherry charcoal, the temperature is 700 degrees. It cooks faster, keeps the juice inside and gives it a bit of a smoky flavor," he explained.

One of Rebolledo's signature dishes is "Huevos Bulla," made with eggs, homemade potato chips, Serrano ham, potato foam and truffle oil. The dish is mixed at the table.

"Although there's a million ingredients, the foam, the eggs, the chips, it doesn't feel heavy. It feels like a comfort food," said Lisa Petrillo after taking a bite.

What's also quite comforting is a creative cocktail called Suavecito made with tequila, cinnamon and other spirits.

"Sauvecito is smooth, it's so smooth, I like it," said Petrillo.

Next, Arroz Marinero which is made with bomba rice, sofrito verde, clams, shrimp, Spanish hake and plankton.

"I've been to Spain before, it's been a long time, but it's brought me right back. he bomba rice is so soft and flavorful, the clams so fresh. This is a true Spanish dish and so good," said Petrillo.

Finally, Bulla's answer to a Cuban sandwich which is made with pork and ham inside a special Spanish bread.

"It's like your best childhood grilled cheese sandwich with a little kick," said Petrillo.

Bulla Gastrobar is a tasty, energetic addition to the growing dining scene in downtown Doral.

It's open 7 days a week for lunch and dinner, brunch on the weekends.
