MIAMI BEACH (CBSMiami) – You might feel as though you've set sail on a cruise ship when you visit 1 Rooftop at 1 Hotel South Beach on Collins Avenue on Miami Beach.

The outside dining and sun soaking spot is 18 stories high with 360 degree views. It's adults only and guests can enjoy great food and creative cocktails. You can sit poolside or dine under the stars day and night.

"What we're selling here is a major lifestyle. Think Ibiza, luxury lifestyle. Think about sharing plates, that's how we formed the menu," said Executive Chef Fernando Cruz.

Chef Cruz is at the helm creating a Mediterranean inspired menu.

"What we're trying to do here is serve it with a Florida twist. We're grabbing melting pot of cultures that Florida has and we're using organic ingredients and we're using local farmers that work directly with purveyors in the style that Florida is," he said.

When the sun sets on One Rooftop, it gets a whole new vibe.

"The lights are dimed. There is music from a live DJ, plus an amazing bar and amazing food as well," Cruz said.

Back in the kitchen, Cruz, who was a contestant on "Hell's Kitchen" with Gordon Ramsey, has "heaven's kitchen" here where he prepares his signature dish, Charred Oysters.

They are Blue Point Oysters topped with his special herb recipe and grilled to perfection.

"There's so much flavor and so delicious and slide down so easy. I didn't know I was an oyster girl- these are really good" said CBS4's Lisa Petrillo.

Next is Tuna Poke, which is fresh tuna with nori puree served with rice chips.

"It is so delicate, so delicious. It's the perfect sharing plate or maybe not – you can just eat it all yourself," said Petrillo.

Then Confit Duck Flatbread served on reclaimed wood.

It has mozzarella blue cheese and confit duck topped with arugula.

"The flatbread has the right crunch, the duck is pop of flavor and the cheese is an extra gift," said Petrillo.

And finally – the lightest Key Lime Pie ever.

It's a sweet swirl of a key lime mousse served with crumbs and a piña colada sorbet.

"It's the softness most delicate key lime pie without the heaviness of a pie! You just swirl," she said.

One Rooftop at One Hotel is open seven days a week for lunch and dinner.
