REEF Serves Up Lionfish Cookbook
KEY LARGO (CBS4) - Borrowing from a phrase popular in Bermuda, the Key Largo based Reef Environmental Education Foundation says "if you can't beat 'em, eat 'em".
So they've launched "The Lionfish Cookbook" which has 45 recipes for the mild flavored fish plus tips on how to handle them without getting injured from their venomous spines.
The invasive lionfish are a new threat to western Atlantic, Caribbean and Gulf of Mexico waters. With voracious appetites and few native predators, the impact to the native marine life is likely to be severe. The lionfish population has been growing rapidly in waters off the Keys, which has concerned environmentalists who say they could devastate coral reefs and disrupt the marine ecosystem balance.
Proceeds from the sale of this book, which goes for $16.95, will go to support REEF's marine conservation and lionfish research activities.
